How to Make a Crisp Skillet Quesadilla
Scatter shredded cheese over one half of a tortilla. Add a thin layer of cooked filling, such as black beans or sautéed peppers, then fold the tortilla in half. Cook in a skillet over medium heat until the underside is golden, then flip and cook until the cheese has melted.
Drain wet fillings before using them. Let the quesadilla sit briefly before cutting it into wedges, and serve salsa on the side to keep the tortilla crisp.
