Skillet Mushroom and Pepper Fajitas
Makes 4 servings.
Ingredients
- 12 ounces cremini mushrooms, sliced
- 2 bell peppers, sliced into strips
- 1 medium yellow onion, thinly sliced
- 2 tablespoons neutral oil, divided
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon kosher salt, plus more to taste
- 1 lime, halved
- 8 small flour or corn tortillas
- Sliced avocado or salsa, for serving (optional)
How to make them
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook the mushrooms in a single layer, working in batches if needed, until browned and their liquid has evaporated. Transfer them to a plate.
- Add the remaining oil, peppers, and onion. Cook, stirring occasionally, until the vegetables have browned edges and the peppers are still slightly crisp.
- Return the mushrooms to the skillet. Add the cumin, paprika, and salt and stir until fragrant. Take the pan off the heat and squeeze in the juice of half the lime.
- Warm the tortillas and serve with the filling, optional toppings, and wedges cut from the remaining lime half.
What to Serve with Fajitas
Add warm black beans for a heartier filling or serve an easy Mexican salad on the side. Keep salsa separate until serving so the tortillas stay firm.
