Pork and Apple Salad Recipe

This Pork and Apple Salad with Grilled Apples is a refreshing salad loaded with flavor! Top with bacon, carrots and feta cheese and you have perfection!

  • Buttermilk  Cup
  • Light mayonnaise or salad dressing 2 Tbsp
  • Crumbled blue cheese 2 Tbsp
  • Green Onions 1 Pc
  • Boneless pork loin chops (about 12 ounces total), cut 3/4 inch thick 2 
  • Snipped fresh thyme or 1 teaspoon dried thyme, crushed 2 Teaspoon
  • Black Pepper ¼ Teaspoon
  • Torn mixed salad greens 8 Cups
  • Apples and/or pears, cored and thinly sliced 2 Medium
  • Coarsely chopped walnuts, toasted (optional) ¼ Cup
  • Black Pepper

  • For dressing, in a small bowl whisk together buttermilk and mayonnaise until smooth.Stir in blue cheese and green onion. Set aside.
  • Preheat broiler. Trim fat from chops . Sprinkle thyme and ground black pepper evenly over all sides of chops; rub in with your fingers. Place chops on the unheated rack of a broiler pan. Broil 3 to 4 inches from heat for 9 to 11 minutes or until no pink remains (160°F) and juices run clear, turning once halfway through broiling. Slice chops.
  • Serve salad greens with apple slices and sliced pork; drizzle with dressing. If desired, sprinkle with walnuts and cracked black pepper.
