Vegan Smashed Chickpea Sandwich

- Whole-wheat bread 4 Slice
- Chickpeas 360 g
- Pickles ¼ Cup
- Red Bell Pepper ½ Medium
- Sunflower seed kernels ¼ Cup
- Red Onion ¼ Small raw
- Sesame butter ¼ Cup
- Dill 2 Tbsp
- Chives 1 Tbsp
- Lettuce 2 Leaf inner

Mash chickpeas until flakey and combine with all ingredients (except bread and lettuce).

Finely dice all veggies aside from lettuce.

Serve on toasted bread with a slice of lettuce, top with remaining slice of bread.
Storage:
- Prepared sandwiches are best enjoyed on the same day they’re made
- Store the mashed filling in an airtight container in the fridge for up to 2 days.
